1–4 lb (2kg) long-cut front pork foot
2 whole dried shiitake mushroom (~15g)
5 whole dried wood ear mushrooms (~15g)
1 carrot, peeled
Juice of 1 fresh young coconut
2 shallots, peeled and chopped
1 onion, peeled and halved
3 tbsp fish sauce
A few slices of fresh ginger
Black pepper
1 tbsp oil
Cilantro (optional)
